RECIPES

Tortilla Chips
8 - 8 inch flour tortillas (my favorite are the whole grain tortillas)
1 tbsp - olive oil
to taste - seasoning of choice...Italian, galrlic and chilli, lemon and herb to name a few.

preheat oven to 375. Lightly brush olive oil on top of each tortilla. Stack 4 tortillas, then with a long knife, cut into eight wedges. Place on a cookie sheet. Sprinkle with seasonings and fresh parmesan cheese (if desired) and bake for 15 minutes. Be careful not to over brown! Tortilla chips willkeep up to 2 weeks in an airtight plastic bag at room temperature.


Big Batch Tomato Salsa

In a large non-metal bowl combine:
6 large tomatoes, seeded and diced
2 red bell peppers, minced
2 green bell peppers, minced
1 sweet white onion, minced
1 tsp jalapeno pepper, minced
1/2 cup white vinegar
1 can tomato paste (use only if you want thicker salsa)
4 garlic cloves, minced
1/2 cup fresh cilantro, chopped
3 tbsp lime juice (fresh squeezed if possible)
2 tbsp lemon juice (fresh squeezed if possible)
1 tsp chili powder
1 1/2 tsp dried parsley
1 tsp salt
1 tsp pepper

Cover and refrigerate for at least 1 hour or overnight for flavours to blend. Keeps up to 4 days refrigerated. This salsa can be used as a dip, or in pitas, wraps, omlettes, chilli and taco bowls. Be Creative!


Chickpea Snacks

2 cans chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp salt
1/2 ground cumin
1/2 turmeric powder
1/2 tsp ground coriander
1/2 tsp chili powder
1/2 tsp garlic powder

Preheat over to 400. In a large bowl or a large plastic bag, toss chickpeas with oil and spices. Spread onto large baking sheets in a single layer. Bake 45 minutes to 1 hour, shaking a few times during baking. Chickpeas will be golden brown when done. Remove and let cool. Store in paper bag or sealed container to keep fresh. This is a great snack along with a piece of fruit!
